Grilled Grouper Mojo

Grouper filet marinated in lime and cilantro, grilled and served with sour orange mojo, yellow rice and black bean muneta


RECIPE: Grilled Grouper Mojo

EXECUTION TIME: 8 minutes

PLATEWARE: 11" Round plate and ramekin

RECIPE:

INGREDIENTS Yield: 1 Order
Grilled Marinated Grouper, (rubbed with mojo) 8 oz.
Yellow Rice, prepared to package directions 6 oz.
Black Bean Muneta, see recipe 4 oz. scoop
Sour Orange Mojo, see recipe 4 oz.
Lime Wedge 1 each
Cilantro Sprig 1 each

PROCEDURE:

  1. Rub grouper with 2 Tbsp. sour orange mojo.
  2. Grill grouper until required temperature is reached.
  3. Place grouper on plate over yellow rice.
  4. Place black beans on side.
  5. Place ramekin of sour orange mojo on the platter.
  6. Top grouper with 1 oz. of heated mojo.
  7. Garnish plate with cilantro and lime.  



RECIPE: SOUR ORANGE MOJO

RECIPE:

INGREDIENTS Yield: 2 cups
Frozen Orange Juice Concentrate 3/4 cup
Lime Juice 2 tbsp.
Salt 1 tsp.
Ground Black Pepper 1/2 tsp.
Olive Oil 1-1/2 tbsp.
Chopped Garlic 1 tsp.
Diced Red Onions 1-1/2 cups
Diced Red Bell Peppers 2 tbsp.
Chopped Fresh Cilantro 2 tbsp.

PROCEDURE:

Combine first five ingredients mixing well. Add remaining ingredients and chill.




RECIPE: Black Bean Muneta

UTENSILS: Sauté pan, measuring cups, measuring spoons, food processor

EXECUTION TIME: 15 minutes

SHELF LIFE: 3 days refrigerated

RECIPE:

INGREDIENTS Yield: 2 cups
Canned Black Beans without juice 2-1/2 cups
Cilantro, freshly chopped 1-1/2 Tbsp.
Olive Oil 2 Tbsp.
Minced Onions 1/4 cup
Diced tomatoes 2 Tbsp.
Minced Garlic 1 Tbsp.
Chicken Base 1 tsp.
Tomato Paste 1/2 tsp.
Parmesan Cheese 1 Tbsp.
Ancho Chili Powder 1/4  tsp.

PROCEDURE:

  1. Sauté onions and garlic in olive oil until tender minutes.
  2. Add cilantro, ancho chili powder and black beans.
  3. Add remaining ingredients, mix well.  Mash with spoon to refried bean consistency.
  4. Serve with grilled grouper mojo.
