RECIPE: Grilled Grouper Mojo

| Yellow Rice, prepared to package directions |
6 oz. |
| Black Bean Muneta, see recipe |
4 oz. scoop |
| Sour Orange Mojo, see recipe |
4 oz. |
| Lime Wedge |

| Cilantro Sprig |

PROCEDURE:
- Rub grouper with 2 Tbsp. sour orange mojo.
- Grill grouper until required temperature is reached.
- Place grouper on plate over yellow rice.
- Place black beans on side.
- Place ramekin of sour orange mojo on the platter.
- Top grouper with 1 oz. of heated mojo.
- Garnish plate with cilantro and lime.
